Some recipes for a higher protein diet

Here are a couple of recipes I modified from Atkins diet book as well as from Dr. Schwarzbein Principle Cook Book 1. Fried chicken salad with any cheese you prefer. I like parmigiano (Parmesan). Modified from Atkins book. 1 small head romaine lettuce, washed and torn into bite-sized pieces, spin-dry, 1/2 cup crumbled cheese, 3 scallions (green onions), white parts preferred, 1/4 cup cooking oil, 1 whole (or more) boneless chicken breast, cut into strips, 1 large egg-lightly beaten, 1/4 cup breadcrumbs. Divide the lettuce between 2 serving plates. Top the servings with half of the cheese and half of the scallions. Heat the oil over medium heat (not smoking hot). Dip the chicken into the egg and then dredge in the breadcrumbs. Shake off excess. Fry the chicken about 5 minutes or until golden brown. Transfer the chicken to paper towels and let drain. Cut the chicken into bite-size pieces and divide on the plates. Serve drizzled with vinaigrette. Salt to taste. 2. Tomato and mozzarella salad. Recipe, modified from Dr. Schwarzbein's cook book. 4 firm, large, ripe tomatoes, 1/2 lb sliced fresh mozzarella cheese, 1/4 cup slivered fresh basil or 2 teaspoons dried basil. Thinly slice tomatoes and arrange on plates. Top each slice of tomato with a cheese slice. Sprinkle with basil. Drizzle with vinaigrette. Salt to taste. Serves 4. Vinaigrette I make is red wine vinegar (2 part) and any preferred oil (3 part), pepper and salt optional.
